Place onion, carrot, celery and potato in a saucepan.

Add lentils, tomatoes and stock.

Season with salt.

Bring to the boil on high heat, then reduce heat to low and cover with lid.

Allow to simmer for 1 hour, stirring occasionally.

Four bean and veg soup

ingredients

1 tablespoon rice bran oil

1 medium brown onion, diced

2 small garlic cloves, crushed

1 small potato, peeled, diced

1 carrot, peeled, diced

2 celery sticks, diced

1/2 teaspoon dried oregano leaves

1/2 teaspoon dried parsley flakes

400 g tinned diced tomatoes

1 tablespoon tomato paste (concentrated purée)

5 cups (1.25 L) vegetable stock (refer to Condiments)

salt

pepper

400 g tin of four bean mix, rinsed and drained
